After several years of research we are today the only ones to offer you a caviar from which the eggs have been extracted by a small caesarean section carried out under natural cold anaesthesia once every 2 years on each of our females.
Caviar is a product whose delicate flavours develop over time when it is matured. We have taken the decision to offer you a blend of caviar matured for a full year with caviar that has been harvested in recent weeks. You will notice that the texture of our caviar is creamier than "primeur" caviars but you will discover much more complex flavours and exceptional length in the mouth.
Our caviar is taken directly from our fish farm in St Guilhem le désert.
On this place, we make free visits with tasting of our caviar as well as of our artisanal smoked products (smoked eel, smoked salmon, smoked fjord trout, sea bream ...).
